Weekend Quiche

Preheat oven to 375 degrees

Prepare:

  • 1 cup chopped ham
  • 1/2 cup of peas
  • 10 oz shredded cheddar cheese
  • 1 cup chopped onions (microwave for 30 seconds)

Combine dry ingredients:

  • 1 cup of white flour
  • 1 tsp. of baking powder
  • 1/4 tsp. salt
  • 3/4 cup parmesan cheese

Combine wet ingredients:

  • 4 eggs
  • 2 cups of milk
  • 1/4 cup melted butter

Add wet ingredients to dry ingredients

Add ham, onion, peas and most of cheese

Pour into lightly greased 10″ round dish and sprinkle remaining cheese on top

Bake for 35 minutes and then until eggs are set and top is browned.

    Yellow Peppers with steak cheese and walnuts

    Requires: Steak Cheese

    Preheat oven or barbecue to 375 degrees

    • 4 yellow peppers
    • 8 mushrooms
    • 1/2 cup of frozen spinach
    • 2 heaping tsp. of garlic puree
    • 1 1/2 cups shelled walnuts

    Preparation:

    1. Cut 4 yellow peppers in half and put in casserole dish (or foil for barbecue)
    2. Slice mushroom into 4 and put in pepper half
    3. Put a layer of spinach on each pepper half
    4. Put a bit of garlic in the center of each pepper half
    5. Add steak cheese to each pepper half until almost full
    6. Add shelled walnuts to each pepper half
    7. Sprinkle a bit of pepper on top

    Cover casserole dish (or cover with foil on top rack of barbecue) and bake for 15 minutes at 375 degrees.

    Steak Cheese

    Combine in food processor:

    • 1 cup shredded cheddar cheese
    • 1/2 cup shredded asiago cheese
    • 1 cup feta cheese
    • 1/2 cup blue cheese
    • 2 cups cream cheese
    • 2 heaping tsp. garlic puree
    • 2 heaping tsp. frozen spinach

    Serve on or with a barbecued strip loin steak.

    Included in: Yellow peppers with steak cheese and walnuts

    Cornbread

    Preheat oven to 400 degrees

    Combine dry ingredients:

    • 1 cup white flour
    • 1 cup cornmeal
    • 1/4 cup sugar
    • 1/2 tsp. baking powder
    • 1/2 tsp. baking soda
    • 1/2 tsp. salt

    Combine dry ingredients:

    • 1 egg lightly beaten
    • 1 cup sour cream
    • 1/3 cup of milk
    • 1/4 cup of melted butter

    Combine dry ingredients and wet ingredients

    Pour into lightly greased 4″x8″ loaf pan, cook for 15 minutes, and then cook until browned. For double recipe, pour into 8″ square pan and cook for 20 minutes.

    Dumplings

    Requires: Stew

    Combine dry ingredients:

    • 1 1/2 cups white flour
    • 2 tsp. baking powder
    • 3/4 tsp salt

    Add:

    • 3/4 cups of milk

    Drop by tablespoon into cooked stew. Cook uncovered for 10 minutes, cook covered for 10 minutes.
